About the Role

 

We're looking for a passionate and skilled Chef to join our Executive Chef Simon Hicks and the culinary team at St Hugo Restaurant in delivering the food and wine experience at the St Hugo site, through an integrated food and wine offer that reflects the St Hugo brand and supports the business strategy.  

 

This position will support the Executive Chef to deliver an a la carte menu which is appropriately priced within the operating landscape. The role will have a passion for regional produce and will understand the needs of local customer base to drive repeat visitation.  

 

The Chef role will support the Executive and Head Chef in the day-to-day operations of the kitchen including working with suppliers, adhering to all food safety requirements, and working to initiatives to assist with efficiencies, continuous improvement, as well as managing costs.  The Chef operates in accordance with Company Standard Operating Procedures and will be required to assist with the delivery of the Chef’s Table experience at the Brand Home.   

 

This is a full time, permanent opportunity.

Key Responsibilities

 

  • Stay up to date with food and wine trends and competitor activity, providing insights and recommendations to enhance the St Hugo experience

  • Collaborate with the FOH team to drive restaurant conversions from visitor traffic

  • Demonstrate a passion for wine and a willingness to learn across the broader wine business

  • Support the Executive Chef in achieving key KPIs including restaurant conversion, food cost, and payroll management

  • Contribute to service delivery during St Hugo’s trading hours, with flexibility to support events as needed

  • Assist in the delivery of premium experiences such as the Chef’s Table

  • Ensure outstanding execution of food offerings in alignment with St Hugo’s food and wine philosophy across restaurant and lounge services

  • Collaborate on the creation and delivery of function menus

  • Support stock control procedures, ordering and storage to ensure quality, compliance, and minimal wastage

  • Maintain high standards in food preparation, presentation, and kitchen hygiene

  • Coordinate equipment maintenance and uphold all SOPs

  • Adhere to company QSE (Quality, Safety, Environment) policies and procedures, including responsible service of alcohol and workplace safety

  • Actively participate in training, CSR activities, and report any risks or concerns related to safety, product integrity or compliance

What You'll Bring

 

Essential

  • Flexibility to work across a 7-day week, including after hours for functions

  • Prepared to undertake any additional training to complement the requirements of the position

  • Current driver’s license

  • Commercial Cookery – Certificate 3 with demonstrated ability as a skilled chef, with proven knowledge of appropriate cooking techniques and principles of good food presentation

  • Attainment of Food Safety Certificate or equivalent

  • Commitment to quality, customer focused service provision

  • Responsible Service of Alcohol and Liquor Licensing Laws certificate

  • Interest and passion for wine

  • Effective written and verbal communication skills

 

Desirable

  • Minimum 3 years food preparation in the hospitality industry

  • Training in Food Handling and Preparation

  • Current First Aid certificate

  • Current Fire Warden Certificate

  • Basic wine knowledge

  • Knowledge of other Cellar Door/ Hospitality offerings in the local area
